1-1/4 cups rolled oats
1 cup whole wheat or all-purpose flour
1/2 teaspoon baking powder
1/2 cup packed brown sugar
1/3 cup soft margarine
DATE FILLING:
2 cups chopped dates (about 1/2 lb.)
1 cup water
1 teaspoon grated lemon rind
1 tablespoon lemon juice
Date filling:
In saucepan, combine dates, water, rind and juice; bring to boil, reduce heat to medium and simmer until soft and thickened, stirring occasionally, 5 to 10 min.
Meanwhile, in bowl, combine rolled oats, flour, baking powder and sugar. Rub in margarine until crumbly. Firmly press half of mixture into lightly greased 8-in square pan. Spread with date filling. Top with remaining crumb mixture, pressing lightly. Bake in 350 F oven for 30 to 35 min. or until lightly browned. Let cool on rack.
Makes 20 squares, each about 115 calories, 2 g protein, 3 g fat, 21 g carbohydrate.
